Quinoa tower with rainbow trout ceviche

Ingredientes:

  • 190 g of rainbow trout.
  • 1 cup of cooked quinoa.
  • 1 avocado.
  • 1 green apple.
  • ½ cup Mr. Lucky celery, finely chopped.
  • 3-4 mini cucumbers Mr. Lucky.
  • 2 green tomatoes.
  • 1 cup of jicama, diced.
  • ¼ red onion.
  • ½ cup of cilantro.
  • 1 serrano pepper.
  • 2 lemons juice.
  • 1 tbsp. olive oil.
  • 1 tsp. White vinegar.
  • Some salsa Maggie.
  • Salt and pepper to taste.

Procedimiento:

  1. Chop into cubes: the jicama, the green tomato, the apple, the mini cucumbers.
  2. Finely chop the celery, onion, serrano pepper and coriander.
  3. Chop the trout.
  4. Mix all the ingredients except the quinoa and avocado.
  5. Taste and adjust seasoning.
  6. Assemble the tower, starting with the quinoa, then the avocado and finish with the mixture of the other ingredients.

* You can eat it with “tostadas”
