Quiche with asparagus, spinach, artichoke and sun-dried tomatoes

Ingredientes:

  • 6 eggs.
  • 2 egg whites.
  • 1 cup of Popeye spinach, cut into julienne.
  • 1 cup of artichoke hearts.
  • ½ bunch of Mr. Lucky asparagus.
  • ¼ white or yellow onion.
  • 1 clove of Mr. Lucky purple garlic.
  • ½ cup of sun-dried tomatoes.
  • 1 cup of mozzarella cheese.
  • 60 g goat cheese.
  • ⅓ cup of light milk or vegetable milk.
  • 1 tbsp. of unsweetened Greek yogurt.
  • Pinch of nutmeg.
  • Salt and pepper to taste.

Procedimiento:

Chop the onion and garlic finely.

Cut the asparagus and artichoke hearts.

Grate the cheese.

In a frying pan with a little oil, sauté the garlic and onion until the onion changes color. Then add the asparagus (cook for 1 minute)

Mix the egg and whites with the milk and the yogurt in a bowl, add the other ingredients, empty the mixture into a baking dish and bake at 356 °F for 35-45 minutes.
