Pasta with Poblano sauce

Ingredientes:

  • 220 gr. of spaghetti.
  • ¼ to ½ cup of milk.
  • 3 tablespoons of unsweetened Greek yogurt.
  • 1 Poblano pepper.
  • 1 Mr. Lucky garlic clove.
  • 1 tablespoon of avocado oil.
  • 2 cups of Mr. Lucky Popeye spinach, raw.
  • ½ white onion.
  • Pinch of salt with garlic.
  • Salt and pepper to taste.
  • Oaxaca light cheese or panela cheese.

Procedimiento:

  1. Cook the pasta.
  2. Roast, peel and devein the poblano pepper.
  3. Chop the onion and garlic (not necessarily finely) and cut the spinach stems.
  4. In a hot skillet with the avocado oil, fry the onion, the garlic and cook the spinach.
  5. Blend the chili, spinach, onion, garlic, yogurt, milk, salt and pepper.
  6. Add the sauce to the pan and cook for 5-10 minutes, then add the pasta and cheese.
