Pasilla Peppers stuffed with Cheese and Corn.

Ingredientes:

  • 6 pasilla peppers.
  • 3 Mr. Lucky sweet corn.
  • 100 gr. panela cheese.
  • ¼ white onion.
  • 1 small Mr. Lucky garlic clove.
  • 3 cups of beans.
  • 1 tbsp. chipotle pepper.
  • 1 tsp. avocado oil.
  • Salt and pepper.

Procedimiento:

  1. Cook and shell the corn.
  2. Soak the peppers in hot water for 5-10 minutes (until desired consistency is reached), cut them in half and remove the seeds.
  3. In a pan with avocado oil, fry the onion, garlic, add the corn, cheese, salt and pepper.
  4. Blend 3 cups of beans from the pot with a piece of chipotle pepper (you can add onion).
  5. Fill the peppers with the corn with cheese.
  6. Serve them on a bed of beans.
