Cous-Cous stuffed Peppers

Ingredientes:

  • 6 Mr. Lucky peppers.
  • 1 ½ cups of whole cooked wheat cous-cous.
  • ½ cup of Mr. Lucky tomatoes, cherry or grape.
  • 100 gr. panela cheese.

For the pesto:

  • 65 gr. fresh basil.
  • 75 gr. parmesan cheese.
  • 45 gr. pine nuts.
  • 130ml. of extra virgin olive oil.
  • 1 tbsp. water.
  • 1 clove of Mr. Lucky garlic.
  • Salt.

Procedimiento:

  1. Add the parmesan cheese, basil, garlic, pine nuts and salt to a food processor. Then add the oil and water in the way of "thread".
  2. Cook the couscous.
  3. Cut the cherry or grape tomatoes in halves and cut the panela cheese into small cubes.
  4. Mix the cous-cous with the tomato, cheese and pesto.
  5. Cut the peppers in half and remove the seeds.
  6. Fill the peppers with the cous-cous mix.
  7. Bake for 30 minutes (approximately) at 356 °F.
