Ingredientes:

  • 6 sheets of pre-cooked lasagna sheets.
  • 1 eggplant.
  • 1 zucchini.
  • 1 portobello.
  • 1 cup of Mr. Lucky Popeye spinach.
  • ¼ white onion.
  • ⅓ cup of ricotta cheese.
  • 2 cups of homemade tomato sauce or sugar-free.
  • ½ cup of grated parmesan cheese.
  • Salt and pepper.
  • Basil.

Procedimiento:

  1. Cut the eggplant and pumpkin into thin slices (you can use a mandolin)
  2. Cut the portobello, onion and spinach into julienne strips.
  3. In a glass refractory, put a layer of sauce, pasta, eggplant, zucchini, portobello, ricotta cheese, spinach, onion and repeat the process.
  4. Top it with Parmesan cheese and basil leaves.
  5. Bake for 40 – 50 min. at 356 °F.
