Salad with Mustard Salmon

Ingredientes:

  • 2 cups of Popeye baby spinach.
  • 1 Mr. Lucky mini cucumber, diced.
  • 5 cherry or grape Mr. Lucky tomatoes.
  • ½ cup of cooked green beans.
  • ½ cup of jicama, diced.
  •  200g salmon.

* For the salmon marinade:

  • 1 tbsp. mustard.
  • 1 Yellow Lemon, the juice.
  • 1 tsp. of Paprika.
  • ½ tsp. of Tajín, low in sodium.
  • Salt and pepper to taste.

Procedimiento:

  1. Marinate the salmon, at least 20 minutes and cook in an air fryer or grill.
  2. While the salmon is cooking, add the salad ingredients to a bowl and dress with a little olive oil, drops of yellow lemon or vinegar, salt and pepper.
  3. Serve the salmon whole or shredded.
