Quinoa Salad Tacos

Ingredientes:

  • 2 cups of cooked quinoa.
  • 1 cup of cooked chickpeas.
  • 1 cup of grated carrot.
  • 4 Mr. Lucky mini cucumbers.
  • ⅓ cup Mr. Lucky celery, chopped.
  • ⅓ purple onion.
  • ⅓cup of dehydrated blueberries.
  • 2 tbsp. olive oil.
  • 1 tbsp. balsamic vinegar.
  • 1 yellow lemon.
  • Salt and pepper.
  • Mr. Lucky lettuce leaves.

Procedimiento:

  1. Cook the quinoa and chickpeas.
  2. Chop the onion, cucumber and celery finely.
  3. Grate the carrot.
  4. Mix all the ingredients.
  5. Refrigerate.
  6. Serve the “tacos” on lettuce leaves.
