Celery cream soup with poblano pepper

Ingredientes:

  • 1 bag of Mr. Lucky celery.
  • 1 Poblano pepper.
  • ⅓ white onion.
  • 1 clove of Mr. Lucky garlic.
  • 1 cup of vegetable broth (You can use the water where the celery was cooked).
  • 1 tbsp. of unsweetened Greek yogurt.
  • Salt and pepper to taste.

Procedimiento:

  1. Roast, peel and devein the poblano pepper.
  2. Cut the celery and cook.
  3. Cut the onion into julienne strips and peel the garlic.
  4. In a hot skillet, fry the garlic and onion with a teaspoon of oil or butter.
  5. Blend all the ingredients together until they become a cream.

* Preferably do not strain the soup to have a greater fiber intake.
