Ingredientes:

  • 2 cups of unsweetened coconut milk.
  • 2 cups of water.
  • 2 cups of Mr. Lucky broccoli and cauliflower florets.
  • 2 cups of mushrooms.
  • 1 ½ cups of green beans.
  • ½ cup of peas.
  • 1 cup of Mr. Lucky celery, finely chopped.
  • ½ medium onion, finely chopped.
  • 1 tbsp. fresh ginger, finely chopped.
  • 1 tsp. turmeric powder.
  • 1 tsp. ghee or coconut oil.
  • Salt and pepper to taste.

Procedimiento:

  1. Finely chop the celery, onion and ginger.
  2. Cut the mushrooms into halves or quarters, the green beans and the florets into halves.
  3. With the coconut oil, fry the onion, celery and ginger
  4. Add the vegetables, turmeric, coconut milk, water, salt and pepper.
  5. Boil over medium heat.
